Apple Salad with Cranberry Vinaigrette

Salad greens (arugula and spinach) for 4 servings
8 slices bacon, cooked and crumbled
1 cup chopped pecans, toasted
1 large NC Gala apple, sliced ¼ inch thick 
1 cup halved seedless red grapes
4 oz. crumbled blue cheese
Place salad mixture on plates and top with bacon, pecans, apple slices, grapes and blue cheese. Then top with vinaigrette.
Cranberry Vinaigrette
1 cup canned whole-berry cranberry sauce
1 tsp. orange zest
½ cup fresh orange juice
¼ cup balsamic vinegar
¼ cup olive oil
1 Tablespoon light brown sugar
2 tsp. grated fresh ginger
½ tsp. salt
Whisk together until blended and smooth
Lisa’s Notes: This is a delicious combination of ingredients for a salad in the Fall.  The dressing recipe is from Southern Living, October 2011.  I also recommend trying this dressing with pork or chicken
